Making Chocolate Breadfruit Pudding in Maui

Over one of our school breaks our family took an amazing trip to Maui, one of the Hawaiian islands. We had a magical trip full of fun and adventure. While we were there we got to shoot 3 new cooking shows. One was with our new friend, John Cadman, owner of the Maui Breadfruit Company. He makes the most deeeelishous Pono Pies. They are made out of a local Maui fruit called ‘Ulu (Breadfruit).

We learned that Breadfruit has so many uses. When it’s not fully mature it is harder and starchier, kind of like a potato. You can bake, boil, roast, fry or steam it and substitute it for things like pasta, rice or potatoes.

As it ripens it starts to get softer and sweeter and becomes more like a banana. This is the stage that John likes to use to make his yummy pies and this tasty chocolate pudding.

Breadfruit is has so many uses and is one of the magical crops of the islands. It is used for medicine, fabric, glue, insect repellent, animal feed and even building construction. It is very nutritious and provides lots of vitamins and minerals and essential fatty acids that give you a lot of energy, help to keep you from getting sick, and make your hair and skin healthy and shiny. It’s so useful that organizations like the Trees That Feed Foundation are planting breadfruit trees in places like Haiti to provide food, materials and jobs to underdeveloped countries. Breadfruit is really a miracle crop!

John used to be a school teacher and we had so much fun in his kitchen! It was like a living classroom. We left with our bellies full and super happy and energized from eating all that delicious breadfruit. Thank you John! We can’t wait to come back to Maui to visit with you again one day soon!

Chocolate Breadfruit Pudding
A creamy, smooth, dairy-free, gluten-free pudding that's so healthy you can even eat it for breakfast!

Ingredients
  1. 2 cups breadfruit
  2. 1 cup honey (or to taste)
  3. 1/2 teaspoon salt
  4. 1 Tablespoon vanilla
  5. 1 cup raw cacao powder
  6. 2 cups non-dairy milk (we used almond milk...add more if necessary when blending)
  7. 1/2 cup melted coconut oil
  8. Lots of Love
Instructions
  1. Blend all of the ingredients together in a high speed blender until smooth. Add a little more non-dairy milk as needed. Scoop into bowls and serve immediately, or keep in the refrigerator.

    In Belize we make Breadfruit Lab.
    Cook or boil breadfruit till soft and add coconut milk, sugar, & cinnamon. Some vanilla or butterscotch flavoring as well. There are so many ways to fix breadfruit.
    Am I understanding your recipe correctly that you are preparing this breadfruit without cooking it?

    1. Hi! Yes, the breadfruit was cooked first to make it soft. Your recipe sounds delicious! Breadfruit is not easy to get in California, but when we get back to Hawaii we’re excited to try your version. Thanks for sharing! And thanks so much for watching!
