It’s summertime! And that means we get to spend time with our cousins! We have 12 cousins on our mom’s side of the family and we are so blessed to get to see them every summer at our Grandma and Grandpa’s beach house in Connecticut. We have so much fun with them, playing on the beach and sandbar, swimming, boating, kayaking, tubing, crabbing, exploring, playing games, singing songs, dancing, laughing….and cooking together. A few of them were excited to help us out with this week’s Cousins Episode. Introducing….AJ, Brady, Julia and Tyler.

- 1 1/2 cups of unsweetened shredded coconut
- 3/4 cup almond meal
- 3 Tablespoons melted coconut oil
- 3 Tablespoons maple syrup
- 2 teaspoons vanilla
- 1/2 cup strawberries
- or
- 1 1/2 Tablespoons raw cacao
- Pulse all ingredients in a blender.
- Roll into balls and place on parchment paper.
- Refrigerate for 1 hour.
- Enjoy!
- Feel free to add strawberries for Strawberry Macaroons, or add raw cacao for Chocolate Macaroons.
